'If you have imagination you need to use it'.
Take the book off the shelf, open it up, look for a recipe and find yourself requiring something, a herb, a spice, a paste, possibly all three that you have NEVER heard of let alone seen in your local supermarket or even the nearest deli. At best you look for something that you hope is similar in someway-although being told something has a unique flavour can be a downer. Or you take some inspiration from it and do what I do, experiment, find your own flavours with what you can get hold of. I did take the time to go on line and two of the spices in the book I found and paid a substantial sum for that means it will be a once only experience using them. That is once they turn up. That is if they do not get lost in the Christmas avalanche of post.
