Not worthy of the name "liquid smoke"
This product is, in my opinion, not worthy of the name liquid smoke. This is more of a BBQ marinade with smoke flavouring than liquid smoke - in fact "smoke flavouring" is behind colouring in this product which both are behind sugar which clocks in at just over 4%. Add to that the fact that "flavouring" is often an indicator that the product is synthetic in origin and there's not much left other than the product being liquid. But let's focus on the flavour then. Well that's a problem as well. Along with sugar, this stuff contains salt, vinegar, garlic, onion and (tamari) soy sauce - which is great if you're looking for a generic BBQ marinade but if you're looking for a replacement for cold smoking, this product completely misses the mark. The garlic, onion and soy sauce may be great for Japanese cuisine (smoky sushi? yes please!) but will be a problem if you're trying for a traditional-tasting gravad lax or smoked cheese - you don't want your authentic European-style recipes to be tainted by soy sauce. In sweet preparations such as smoked banana (yes, it's a thing), the added garlic, onion and soy sauce will also be out of place.
