why?
because of the detail ...the teeth have compound angles and are set slightly wider than the body of the blade.
the whole body of the blade is flat ground to a rough finish to reduce friction.
the stainless steel is alloyed and heat treated to last ..and last
the blade is short enough to be handled easily and is thick enough not to warp with enthusiastic use..
so ...expensive but worth it
