I honestly didn’t know the difference

An acquired taste but worth the effort...
I imagine liquid smoke is an acquired taste. I first encountered it on my travels in the United States and developed a taste for it there. Of course it is no substitute for a genuine smoker or BBQ pit but back at home it really scores when you want to add a classic smoky bite to marinades and it is an essential ingredient in home made burgers. If you really like it smoky then I have found that this in conjunction with smoked paprika and chorizo can make for a devilish combination. I also frequently use it for an added flavour in casseroles when appropriate. All in all this is definitely a product you should experiment with.
