Synopsis
Gourmet restaurateur and vegan food expert Miyoko Schinner shares her secrets for making homemade nondairy cheeses that retain all the complexity and sharpness of their dairy ounterparts while incorporating nutritious nuts and plant-based milks. Miyoko shows how to tease artisan flavors out of unique combinations of ingredients, such as rejuvelac and nondairy yogurt, with minimal effort. The process of culturing and aging the ingredients produces delectable vegan cheeses with a range of consistencies from soft and creamy to firm. For readers who want to whip up something quick, Miyoko provides recipes for almost-instant ricotta and sliceable cheeses, in addition to a variety of tangy dairy substitutes, such as vegan sour cream, crèmefraîche, and yogurt. For suggestions on how to incorporate vegan artisan cheeses into favorite recipes, Miyoko offers up delectable appetizers, entrées, anddesserts, from caprese salad and classic mac and cheese to eggplant parmesan and her own San Francisco cheesecake.

    Miyoko Artisan Vegan Cheese

The book is excellent. The content you can not miss a word. And you have to be patient because it’s a process. The flavor of the cheeses are terrific. The recipes are very easy but you need first to have your home made ingredients in order to get the best ultimate cheese. Good luck and lots of patience 😃!!!!!!!

  • Most critical review

Misses the Mark in my mind. Font of the book is unreadable due to using Pumpkin Colored ink.

Well, I thought about talking to you about returning it. The book is written in a pumpkin colored font for starters, and if you have issues with eye sight, this book is a problem that other's have mentioned. I only wish I had taken the time to read the reviews FIRST. Few photos that only show end product, and because this is a very special form of "cheese making" you need clear tutorials, this doesn't come close to the mark. Again, many people reported that even following the instructions point by point they couldn't come up with the end product being produced like it is from Miyoko's or from the company. I have used her products since 2012 and know of her results. I don't know what the problem is or why. Since I can't read the font, there is absolutely no way I can even try to find ...

  • The best of both worlds

This is an easy to follow guide to the vegan cheese world for those of us who miss the cheeses and all those comfort recipes that include cheese and are simply unsatisfied with the available commercial alternatives that leave you wanting on so many levels!

  • This is a fantastic book! So interesting and so many cheese options.

This is the second time I've gotten this book - but not the last! I gave it to a vegan friend who is very excited about making the cheese with me. :)
